About Our Fresh Fish

We pride ourselves on selling fish of the freshest and finest quality, if it’s not good enough, we won't buy it.

The farmed fish we offer is produced to the highest standards with a weather eye on protecting wild stocks and helping rebuild them by not overfishing. An example is our superior Faroe Island Salmon, which is farmed without anti-biotics, fed natural food, and grown in fast flowing water. The nearest thing to wild Atlantic salmon that you can legally buy in the UK.

Cornalls offer a core selection of fish which can be sustainably sourced all year round, these should be available both online and at our shop in Shrewsbury Market Hall. Species which we source daily, in smaller quantities, are available on a first come first served basis at our shop in Shrewsbury Market Hall.

When going to buy fish it is best to have a similar alternative fish in mind, for instance we may not have Turbot, so substitute Brill or Halibut, or whatever your recipe book suggests. Remember, cooking of fish is not prescriptive, so treat each portion according to its characteristics, for example, thickness, firmness, and moisture content.

Cornalls fish has been brought ashore by our intrepid fisherfolk. Daily they take to sea not knowing what they may encounter, storms, a dearth of fish, and not to mention dangerous machinery. Our offering reflects all these challenges, time, tide, luck, risk, and weather. As a result, we encourage people to be flexible in their choices, to be adventurous with their cooking and to embrace the wonderful variety our seas have to offer. We’ve even provided some recipe suggestions to whet your appetite.

How fresh is our fish?

To ensure that you receive prime fresh fish in the best possible condition we collect from market in our own refrigerated transport in the early hours of Tuesday morning. We then receive daily refrigerated deliveries from Cornwall and Fleetwood throughout the week.  We cut and vacuum pack each order individually by hand to minimise oxidation and maintain quality. This means that when your order is ready for collection it’s as fresh as can be. None of our fish, to buy online, has been frozen prior to delivery to you.

Exceptions

Some seafood items on the platters arrive in to us frozen, this is because of the catch areas they come from. Therefore, they must be kept refrigerated and consumed within the time specified.
