Cornalls Fish Pie
Nothing beats a creamy fish pie, this comforting family-friendly dish is quick and easy to rustle up.

Ingredients
350g Cornalls fish pie mix
Single cream
Sea salt & pepper
Tarragon
Parsley
Peeled prawns
Cheese
2 large potatoes
1 leek
Frozen peas
1 clove garlic
1 small shallot
Butter
White wine
Method
Step 1
Heat the oven to 180 degrees C.
Step 2
Peel, boil and mash the potatoes.
Step 3
Whilst the potatoes are boiling, poach the fish mix for 3 to 4 minutes, then sieve, retaining the liquor for later use.
Step 4
Sauté the chopped leek, shallot, and garlic until soft.
Step 5
Add the white wine, a little of the liquor, cream, tarragon, parsley, prawns, and peas season to taste and reduce until thick and creamy.
Step 6
Place fish in an ovenproof dish, add the sauce, and cover with mashed potato, sprinkle with grated cheese.
Step 7
Bake in the oven until the cheese is golden and the pie is bubbling.
Step 8
With steamed green vegetables or salad.
