Pan-fried cod loin with brown shrimp and caper butter sauce
This simple but flavoursome dish is perfect for any occasion.

Ingredients
2 cod loins
½ lemon
2 tablespoons brown shrimps
2 large potatoes
2 tablespoons double cream
tenderstem broccoli
1 teaspoon capers
splash of white wine
1 tablespoon chopped parsley
olive oil
butter
salt
pepper

Method
Step 1
Heat the oven to 180 degrees C.
Step 2
Peel and chop the potatoes, boil, add butter to taste, and mash.
Step 3
Whilst the potatoes are cooking, pat dry the cod.
Step 4
Heat a little oil a frying pan and add a knob of butter.
Step 5
Place the cod skin side down and fry for around three minutes, basting with the oil and butter.
Step 6
Add sea salt, black pepper, and a little fresh thyme, turn over and cook for a further two minutes.
Step 7
Add tender stem broccoli to boiling salted water and simmer until tender.
Step 8
Place the cod on a baking tray and pop into the oven for a couple of minutes whilst plating up.
Step 9
Add a splash of white wine to deglaze the pan, then a knob of butter, the capers, and shrimps then stir until the butter is melted.
Step 10
Place the mash on the plate, balance the cod on top, and nap with the sauce, put the tender stem to the side.
