Panfried Sumac Salmon

Delicious panfried salmon with a tangy, Middle East spin.

Serves: 2

Ingredients

½ lemon

olive oil

sea salt

baby new potatoes

tender stem broccoli

2 180g salmon fillets

French dressing

1 teaspoon sumac powder

½ teaspoon fennel seeds

pepper

½ teaspoon dried coriander leaf

Method

Step 1

Preheat the oven to 180 degrees C.

Step 2

Lightly oil the surface of the salmon and coat evenly with sumac powder, fennel seeds, and coriander

Step 3

Oil a frying pan and fry skin side down for 3 minutes or until skin is coloured and crisping, then turn and do the same on the seasoned side

Step 4

Flip on each edge for a minute each, sealing all four surfaces

Step 5

place the salmon on a baking tray, skin side up, and put in the oven for a few minutes

Step 6

Serve salmon with new potatoes and tender stem broccoli, add a squeeze of lemon, salt, pepper, and a drizzle of French dressing.
